Oh lord.... when the cravings hit is when the best cooking comes out of me
Decided I wanted muffins for the week 😛
But, as I was brainstorming what kind of muffins so many came to mind, and eventually I got the list down a bit 👌
After intense negotiations (with myself) 😂 I decided chocolate was the move 👌🍫🍫🍫
...... you can never go wrong with chocolate

But I didn't want a dry little nothing of a muffin, I wanted HUGEEE, soft, and moist 😛 like fresh out of a New York City bakery muffin 😏
kinda reminded me of the Costco muffins my mom would get when I was younger! Goodness me🙈🙈, they were all I would eat back in the day 😂 coincidently they were awful for you in terms of nutrition, and probably had as much sugar in them as about 3 snickers bars hahaha
So making these muffins healthy, delicious, and MASSIVE was the mission 👌

They came out massiveeeeeeeeee 👌, chocolately, and ridiculously good 😦
I decided to use Greek Yogurt in the batter and the base of the recipe to keep them moist and give them a little extra protein kick, and the results.... Tooooo bombbbbb 💣💣💣💣💣
Sealing these bad boys up so they stay fresh for snacks for the week.......

Ingredients-
yields 6 muffins (can easily be broken into 12..... but believe me, go big or go home)
Dry:
Wet:
Instructions-

Dry:
- 1cup oat flower (just blend rolled oats till flower like consistency)
- 2 scoops molten chocolate Cellucor Whey Protein Powder
- 3 Tbs raw cacao powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 generous tbs chocolate chips - enjoy life brand
Wet:
- 2 mashed bananas
- 6 ounce greek yogurt (0%) - FAGE small container-plain
- 2 eggwhites (6 tbs)
- liquid stevia drops to taste (chocolate used in mine)
Instructions-
- Set oven to 350
- spray muffin pan with non stick spray (I use coconut oil)
- Mix all dry together (except chocolate chips)
- Mix all wet together in separate bowl
- Combine wet with dry and mix till combined
- Pour/spoon batter evenly into 6 muffin tins
- Top with the 1 tbs of chocolate chips you have
- Stick in the oven and bake for about 25 min, check yours because ALL OVENS ARE NOT MADE EQUAL PEOPLE
- Take out when you can stick a toothpick/knife in it and it comes out clean
- Let cool on a cooling rack for 20 min or so (hardest part)
- Keep in a sealed container in fridge for up to a week
