Ive been in New york and have been pretty busy, so coming back to a kitchen with all my goodies is exactly what the dr. called for. I've been wanting to experiment with the new cellucor S'mores whey protein and when the idea of protein popper muffins came to mind it was time to jump bake into the kitchen and to make some magic happen.
I can't think of a better feeling then testing out recipes, and having it come out perfect. winning the lottery is a close second.
The new Cellucor S'mores whey is easily one of my new all time favorite wheys in the history of protein powder.......
It has mini marshmallows and graham cracker crust in the mix.......

The Melty Banana Chunk Crunch chocolate bar, with the gooey mini marshmallow, and the crisp of the graham cracker crust is enough to make these muffins over the top ridiculously good.

Ingredients:
Dry-
- 1 cup oat flower
- 2 scoops S'mores Whey Protein (cellucor)
- just a dash of ground cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cut up chocolate bar finely chopped- I used crunchy banana from HuKitchen (opt to use a bar with a crunch- Ex: dark chocolate quinoa or a chocolate almond bar)
Wet-
- 1 cup mashed banana (2 bananas)
- 1 small container fage 0% Greek (6oz) yogurt
- 2 egg whites (6tbs)
- vanilla or chocolate stevia sweet leaf drops to taste (3-4 full droplets full)
- 1/2 tsp vanilla extract
- 1/2 - 1/4 butter extract
Instructions:
- set oven to 350
- Take out muffin pan and spray with non stick (I use coconut oil)
- In a bowl combine all dry ingredients and mix with fork
- combine and mix all wet in another bowl
- combine both bowls, and mix till well combined
- Spoon batter evenly into 10 of the muffin tins
- Top the muffins with other half of chocolate bar that isn't mixed in with the batter
- Bake in oven for 20-25 min
- Pull out of oven, let cool for 10-15 min or so
- Eat, save the rest in Tupperware container in the fridge for up to a week
