Were talking ginger bread flavored stuff in the summer, pumpkin spice in the spring, peppermint flavored things all the time, the list goes on and onnnnnnn
Just because change of seasons comes doesn't mean I'm giving up all the yummy stuff 😉

Decided since my Apple pie Àla mode overnight oats were such a hit a couple days ago, pie was the objective again, but this time baked! To give it the full Pie effect 👌

So what did I top my Baked oats with?
Get creative people 👌 something about coconut and pumpkin is just too good to pass up 🎃🌰 and if you haven't tried it, highly recommend it

- Wild friends - coconut Peanut butter
- A ring of fresh blueberries
- Chopped dried fig
- Dehydrated cinnamon pumpkin
- And a sprinkle of shredded coconut to Finnish it off!

Ingredients:

Wet:
Instructions:
Dry:
- 1/2 cup oats
- 1 scoop cinnamon swirl whey (cellucor)
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/2 tbs butterscootch extract (can be subbed with vanilla if you don't have it)
- dash of cinnamon (optional if you use cinnamon flavored whey)
Wet:
- 1/2 cup almond milk
- 1 eggwhite (3 tbs eggwhites from carton) shake carton before using to mix eggwhites up
- Liquid stevia to taste (toffee sweetleaf)
- 1/4 cup pumpkin
Instructions:
- Set oven for 375
- Spray a oven safe bowl with non Stick spray and set aside (I use coconut oil)
- Combine all Dry ingredients and mix till combined in a separate bowl
- Combine wet and dry mix till combined.
- Pour mixture in greased oven safe dish
- Add dash or 2 of pumpkin spice to the top
- put it in the oven
- Bake for 27 min: check yours because all ovens are not equal!
- Take out of oven and let cool for a couple min (if you can wait)
- Top with good stuff 😛
