So Blueberry Vanilla Maple Chia Jam was used in my recipe for the swirls!
ll be sure to include the recipe for the jam, so you guys can try it out if you'd like! (every Pb&j sandwich I make uses this homemade jelly, and its previously included in some of my oat recipes)

This was a complete experiment, and to be honest with you that's how all the greatest recipes come to life. I never follow any set guideline or any form of recipe what so ever. I just know what I like and I usually am good at making my own creations!
The main thing I wanted was to make the recipe actually taste like a peanut butter and jelly sandwich, Not just straight peanut butter flavor and not to much jelly.
If I wanted a straight peanut butter taste I would go straight to the jar (which is always a viable option)

Look at those swirls........... this was my first recipe swirling something in the batter like this, and it came out so well you can expect more swirls in the future.

Like I said, i was looking for that classic PB&J flavor, the flavor that you would find in your brown paper bag lunch in grade school.

I was looking for a dense bar overall , but still really moist, somewhat gooey in the middle, but a nice crust on the outside to resemble the bread. all the great elements that make up a good PB&J!

The whole recipe makes 9 bars, and so far these things have been just about the only thing in my mouth......
I've tried them just about every way, but I'm telling you..... the best way to eat one of these things is cold. store them in the fridge, and grab one when your in the mood for a snack. one word for these things.....

Ingredients-
Blueberry vanilla maple Chia Jam- (MAKE BEFORE BARS)
Bars-
Dry:
Wet:
Instructions- FOR JELLY

Blueberry vanilla maple Chia Jam- (MAKE BEFORE BARS)
- 1 cup Blueberries
- 1tbs sugar free syrup
- liquid stevia drops (vanilla)
- 1tbs Chia seeds
Bars-
Dry:
- 1cup oat flower (just blend rolled oats till flower like consistency)
- 1/2 cup rolled oats (do not blend and make into flower, keep whole)
- 2 scoops Peanut Butter Marshmallow Cellucor Whey Protein Powder
- 1 scoop Whipped Vanilla Cellucor Whey Protein Powder
- 6-9 Tbs PB2 or Just great stuff (Peanut Butter Flower)
- 3 tbs finely shredded reduced baking coconut (I used this one)
- 1 tsp baking powder
- 1/2 tsp baking soda
- dash of cinnamon
Wet:
- 3 mashed bananas
- 2-3 egg whites (9 tbs)
- 1/4 - 1/2 cup of 0% greek yogurt 6oz container (less or more depending on if you want them dense)
- 20 liquid stevia drops (vanilla used in mine)
- splash of vanilla extract
- 1/4 butter extract
- 3tbs sf maple syrup
- 3tbs vanilla unsweetend almond milk
Instructions- FOR JELLY
- Combine blueberries and syrup and microwave on 30 second intervals till you get hot liquid (4 intervals for me mixing twice)
- mash and mix Blueberry /maple syrup mixture till blueberries are all broken down
- add 1 tbs Chia seeds and stevia drops
- mix mix mix mix till seeds are all combined
- store in container in fridge to thicken and absorb (2-3 hours?)
Instructions- FOR BARS ONCE YOU HAVE MADE JELLY
- Set oven to 350
- Spray 8x8 pan with nonstick spray and set aside (I use coconut oil)
- Mix all dry together
- Mix all wet together
- Combine wet with dry and mix till combined
- Pour/spoon batter into pan and shake to flatten out
- Top with lines spooned chia Jelly, then use a knife running through the batter to make swirls
- Stick in the oven and bake for 35-45 min, check yours because ALL OVENS ARE NOT MADE EQUAL PEOPLE ( i like mine soft in the middle so I tend to stay on the shorter side)
- Take out when you can stick a knife in it and it comes out relatively clean
- Place in fridge under a napkin (this is essential if you want a gooey inside to the bars, it quickly cools the outside wile leaving a chewy Moist middle)
- Take 8x8 pan out of fridge after an hour or so, and slice into 9 bars
- Keep in a sealed container in fridge for the future!
