Dessert for breakfast?..

3. Bomb breakfasts are an everyday occurrence.
The breakfast brainstorm came to a conclusion when the idea of combining number 1 and number 2 on the previous list came to mind.
Tiramisu overnight oats it was!
But if I was going to make it I wanted it exactly how the Italian dessert is made.
With that creamy vanilla bean Mascarpone filling.... Expresso/coffee kick.... The boldness from the Rum/Brandy.... Just a touch of Tart from the fresh berries..... And that little taste of chocolate on the top layer....
Someone stop me from drooling.

Ingredients:
Oatmeal-
Vanilla cream Italian mascarpone immatation -
Oatmeal-
- 1/2 cup rolled oats
- 1 tbs chia seeds
- 1 scoop Whipped vanilla whey protein (cellucor)
- 1 tsp instant coffee granules (I used a K-cup pod, carmel Starbucks flavor- the carmel added to the tiramisu taste)
- 1/4 cup Greek yogurt (0%)
- 1/2 cup vanilla unsweetened almond milk
- drops of sweet leaf stevia to taste (I used vanilla cream)
- 1/4th tsp Vanilla extract
- 1/2 tsp Rum Extract
Vanilla cream Italian mascarpone immatation -
- 3 spoon fulls 0% greek yogurt
- 1 tbs vanilla Sugar free fat free Jello Pudding mix (recommended)
- 1 tbs Cellucor whipped vanilla whey (if not using pudding mix then sub with 2 tbs of whey instead)
- sweet leaf vanilla cream drops
- sweet leaf toffee drops
- 1/4 butter extract (optional)
Instructions: - Mix all above oatmeal ingredients till combined in a sealable container and place in fridge for 3-4 hours till thick.
- when oats are ready, mix all Vanilla cream italian mascarpone ingredients in small bowl and let chill for 5 - 10 min in the fridge.
- Come back and layer the imitation mascarpone, fresh fruit (I used layered raspberries), and the oats in a sealable mason jar.
- Once everything is layered seal mason jar and place in fridge overnight.
- In the morning, top with 1 tbs raw cacao nibs and dig in
