Well after a short break from the kitchen (from spring break and getting pounded with school work) I finally made it back...
And oh boy, did I have some time to contemplate some recipes.

The first order of business was figuring out which recipe to choose......
And from the look (and taste) of these muffins, let me just say I deserve some sort of reward/trophie because these could be hands down the greatest muffin to ever grace my life.

Snickerdoodle could be my favorite flavor ever.
Let's face it... Snickerdoodle is a top 5 flavor.... And if anything is Snickerdoodle flavor then it's automatically delicious....
If a shoe tasted like Snickerdoodle I'm pretty sure I'd be just fine munching on some nikes...

One thing I love is how easy these muffins are. I always make my recipes with minimal ingredents, so everyone can try them and enjoy them.
Plus recipes with 5627958 ingredents are no fun.

To add to the Muffins awesomeness they are so convient, I grab two of them before I'm running out the door headed to the gym, and have them with a protein shake post workout.
The Greek yogurt and pumpkin add to the muffins moisture, keeping these fresh and ready for a week whenever your reaching for one. Make sure you store them in the fridge under lock and key... Way too good to share with anyone.

Blueberry Pumpkin Cinna-Swirl-Snickerdoodle Muffins
10 muffins total-

Ingredients:
Dry-
- 1 cup oat flower
- 2 scoops cinnamon swirl whey by cellucor
- 1tsp baking powder
- 1/2-1/4 tsp baking soda
- Couple shakes of cinnamon
- 1/2 tsp pumpkin pie spice
- 1/3 cup dried mulberries
- 1 cup blueberries
Wet-
- 1 cup pumpkin pure
- 1 small container fage 0% Greek (6oz) yogurt
- 2 egg whites (6tbs)
- Cinnamon stevia sweet leaf drops to taste (a lot)
- Splash of maple extract
- Splash vanilla extract
Instructions:
- set oven to 350
- Take out muffin pan and spray with non stick (I use coconut oil)
- In a bowl combine all dry ingredents (except blueberries)
- Add all wet ingredients to dry in bowl and mix till well combined and no dry ingredients are visible
- Add 1/2 cup blueberries to batter and mix.
- Spoon batter evenly into 10 of the muffin tins
- Top the muffins in the tin with the extra blueberries you saved, then dash with a sprinkle of cinnamon on each muffin
- Bake in oven for 25 min
- Pull out of oven, let cool for 15 min
- Eat, save the rest in Tupperware container in the fridge for up to a week (recipe can also be put in freezer for longer after a week to keep fresh)
