With October, halloween, and everything you can imagine in pumpkin flavor its good to welcome back one of the best seasons....
Is it the best because every thing is somehow involved with pumpkin spice?...
...Or how about the stores starting to carry Boo Berry and Count Chocula cereal again? thats gotta be why its the best season, right?? Is that the reason??
....Both are valid answers, but we all know the main reason is candy.
Everyones got a favorite candy (weakness) mine come in the form of kit kat's, Twix, and a couple other handfuls (and I mean handful literally).

I'm not to sure who this "Anne of green gables" is, but i do know me and her would get along great.

check out the full recipe and macros below for my new Double Dark Protein Chocolate Chip Coconut Mounds Muffins!
Ingredients: (10 muffins) - each : 165cal - 5 fat, 21 carbs, 11 protein
Instructions -
- 1 cup oat flour (114g rolled oats blended into flour)
- 2 scoops PES Select protein (Milk Chocolate flavor)
- 1tsp Baking Powder
- 1tsp baking soda
- 20g raw cacao (around 3 tbs)
- Mashed Bananas (322g) about 3 (1 1/2 cups mashed)
- 2 egg whites (6Tbs)
- 1/2 tsp Coconut extract
- 1/2 tsp Vanilla extract
- liquid stevia drops to taste I used a combination of coconut and chocolate (sweet leaf)
- 3 heaping Tbs Greek Yogurt (60g)
- 80g dark chocolate chips (roughly 1/2 cup)
- Coconut: Shredded unsweetened 10g
Instructions -
- pre heat oven to 350
- line muffin pan with non stick spray (I use coconut oil).
- combined all dry ingredients in big bowl and mix.
- in a separate bowl combine all wet till well mixed.
- combine the 2 bowls and mix till no clumps.
- once combined, add in half your chocolate chips (save the other 1/4th to sprinkle on top)
- Spoon batter into muffin tins
- sprinkle remaining dark chocolate on top
- then sprinkle your 10g of shredded coconut
- bake for 15-20 min, until inserted knife comes out clean (not all ovens are the same, so check yours at 15min and in intervals of 5 min if they are undone).
- Take out once inserted knife comes out relatively clean, and they have cooked.
