Ingredients-
Whole batch makes 18 Protein Poppers
Macros for 1 - 4.5F - 10C - 7P
- 1 cup Almonds (I used raw, but you can try roasted almonds)
- 1/2 cup pitted Medjool dates (about 5-6 depending on size of dates)
- 1/4 cup quinoa - Dry, uncooked
- 3-4 scoops of whey protein powder (I used 3, two scoops of cellucor Cinnamon Swirl & one Whipped Vanilla)
- 1/2 cup cooked sweet potatoes
- 2 tbs nut butter (I used p28 signature blend)
- 1/2 cup warm water
Instructions-
- Cook the sweet potato anyway you'd like (microwave, bake, boil)
- In a processor (I used my vita mixer) blend only the almonds, dates, and quinoa. then grind till corse and all crumbled
- Add all the rest of ingredients to processor.
- process till all combined (may need to stop to push sides down
- when finished scoop out mix to a large bowl (it will be thick as hell and very hard to get out, and probably is the hardest part)
- Once blender/processor is cleaned out stick mixture in fridge to cool for an hour or longer.
- Use a tbs and your palms/hands to roll into balls (wet/warm hands because they are sticky)
- Store in containers in freezer for a quick superfood boots any time!
