That moment when you make breakfast..... And its the greatest thing ever.......

I can't remember where I got the idea to dip my banana in syrup, coat it in coconut and cinnamon, and then Sauté it, but obviously as you can see from these pictures it couldn't have been any better.
The greatest creations start when I stumble out of bed.
Still half asleep, its early, and have a Econ class to get to.
Its like I turn into a breakfast genius with the combinations and crazy ideas that come to me.
The Einstein or Picasso of breakfasts, if you must.

Baked oats and I have a love hate relationship.
The way its a love hate relationship is that obviously baking takes more time, and I swear the 30 or so minutes this oatmeal bakes is agonizing......
It mocks me as I wait for it to come out..... 30 minutes might as well be 30 hours.
Can you tell I have a microwave dependency, and I'm very much into instant gratification?
good me either.
But what I've come to realize is that all good things take time,
And because the wait finally pays off when its all said and done.

Coconut Cinna-Swirl Banana-Baked-Oats

Sautéed Maple Coconut Bananas

Ingredients:
Dry:
Wet:
Sautéed maple coconut banana:
Instructions (for Oats and Sautéed bananas):
Dry:
- 1/2 cup oats
- 1 scoop Cinnamon Swirl whey (cellucor) (option to use vanilla whey if you add 1/2-3/4 tsp ground cinnamon)
- 1/2 tsp baking powder
- sprinkle of cinnamon
Wet:
- 1/2 cup vanilla Unsweetened almond milk
- 1 eggwhite (3 tbs egg whites from carton)
- 1/2 tsp Coconut extract
- Liquid stevia to taste (sweetleaf drops- cinnamon flavor used)
Sautéed maple coconut banana:
- 1 banana
- 2 heaping tbs sugar free syrup
- 2 tbs shredded coconut
- Ground cinnamon
Instructions (for Oats and Sautéed bananas):
- Set oven for 375
- spray a oven safe bowl with nonstick spray (I use coconut oil)
- Combine all Dry ingredients and shake bowl a little till combined
- Combine wet and dry mix till combined.
- Pour mixture in your greased oven safe dish
- Bake for 27 min
- While oats bake put skillet on stove at low/medium heat with non stick spray (I use coconut oil)
- Cut banana into coins, dip in maple syrup, then dip in shredded coconut and set aside
- Once you have done this with all banana add to the skillet
- Sprinkle with cinnamon, and cook both sides of bananas till caramelized
- take oatmeal out when done
- top with your sautéed bananas
- add any other toppings (I added 2 tbs almond butter)
