And when cellucor came out with their new Mint Chocolate Chip Cor-Performance Whey I knew the week was gonna be filled with minty goodness.
Simply put, the quest to try this flavor protein in as many ways as possible has just begun.....
Obviously I decided pancakes were the first order of business, and they did not disappoint. As you can see.
Although the pancakes were on point I. Still wanted to experiment with the flavor even more....

These brownies are minty, chocolatey, Fudgy, squares straight from protein heaven.
The chocolate and mint combination is a combination of Fergie and Jesus.........

And that was the texture and consistency I was going for. chewy, fudgey, chocolatey.
And good news for you guys (and my mouth) because these brownies are so good they would slap a cosmic brownie across the face and get away with it.

These are versatile, the protein can be switched and flavors can be changed.... but nothing is better than mint chocolate chip....
Brings back memories of when I was younger, and going to get ice-cream at Brusters with my best friends.

Post workout, a snack on there run, on top of fro-yo, in a protein milkshake, in pancakes, mixed with greek yogurt, with peanut butter.......

Cosmic-Copycat Mint Chocolate Chip Protein Brownies

Ingredients-
Whole batch makes 12 of the best damn brownies you've ever had
Mix all in processor (I used a ninja) :

Whole batch makes 12 of the best damn brownies you've ever had
Mix all in processor (I used a ninja) :
- 1 cup Black beans (caned- rinsed and dried : used a colander)
- 3/4 cup oat flower(Blend rolled oats in a processor before hand)
- 2 scoops mint chocolate chip Cellucor Whey Protein Powder
- 1 cup pure pumpkin (Not pumpkin pie mix)
- 1/4 cup raw cacao powder or cocoa
- 1 tsp baking powder
- 3 tbs sugar free maple syrup
- 1tsp vanilla extract
- 1/2-1/4 tsp butter extract (optional)
- 1/4 cup almond milk
- Liquid Stevia sweet drops (chocolate -I use a lot)
- 1 egg white (3 tbs)
Separate:
- 1/4 cup raw almond (chopped/crushed into pieces)
- 3 tbs enjoy life mini chocolate chips
Instructions-
- preheat oven to 350
- spray 8X8 pan with non stick spray (I use coconut oil)
- Mix all together in a food processor till all mixed to a thick batter (except chocolate chips/almonds)
- add half the almonds and half the chocolate chips and pulse just to mix them in with the batter(or mixin with knife)
- Pour/spoon batter evenly into your 8X8 pan
- Top with the rest of chocolate chips and left over almonds you have
- Stick in the oven and bake for about 30 min, check yours because ALL OVENS ARE NOT MADE EQUAL PEOPLE
- Take out when you can stick a toothpick/knife in it and it comes out clean
- Let cool on a cooling rack for 10 min or so, then sick in the fridge while still in the pan for another 15-25 min (this is important for the fudginess your looking for)
- take out of fridge and cut into 12 squares
- Keep in a sealed container in fridge for up to a week
