I just got back from vacation earlier this week, and I can't tell you how much I missed my kitchen......
Don't get me wrong! I had a great time on vacation, but the ideas that were swirling in my head were just too much for the "notes section" on my I-phone to handle.
After thinking about what recipes I wanted to tackle first, I knew I hit a home run when Double Chocolate Raspberry-Truffle Protein Brownies came to mind. So naturally I got straight to work.

I hadn't had much time to play with the new Chocolate Raspberry Truffle Cellucor Cor-Performance Whey flavor that just came before my trip, so I knew I had some catching up to do.
These brownies though.........

I was looking around the kitchen for my 8X8 brownie pan I usually use to whip up my brownies/bars and other goodies, and I might have stumbled on the greatest idea I've ever had.
My mini loaf pan....... That way every brownie has some edges...... I'm so genius sometimes I scare myself.
Do you wanna hear something scarier?
How good these brownies are....
It's actually my fist time using almond flour in a brownie recipe, and I'm happy with how they turned out. Kinda adds a different texture to you're baking/cooking rather then using oat flour or other flours.
Overall the chocolate complements the raspberry flavor, which completely complements the almond flower taste, and that adds to that truffle kick you get.......
So I'd say these are perfect.

Ingredients-
Whole batch makes 12 brownies (made 6 in my mini loaf pan then cut in half for 12 total)
Macros for 1 - 7F - 12C - 8P
Mix all in a big bowl:

Mix all in a big bowl:
- 1 cup Oat Flour (make your own by blending oats in a blender till flour like consistency - 30sec)
- 1/2 cup almond flour
- 2 scoops Cellucor Chocolate Raspberry Truffle Whey
- 1/2 cup Raw Cacao Powder
- 1/2 cup Sugar Free Maple Syrup (honey, agave, date paste maybe?)
- 1 tsp baking powder
- 2 Egg whites (6 TBS)
- 2 heaping tbs of Coconut Oil (I use Extra Virgin)
- 1/2-1/4 tsp butter extract (optional)
- 1 Cup almond milk
- Liquid Stevia sweet drops (chocolate sweet leaf used in mine)
- 2 tbs chocolate chips (enjoy life brand)
Instructions-
- Preheat oven to 350
- Spray 8X8 pan with non stick spray (I use coconut oil) - I used mini loaf pan because every brownie deserves multiple crispy edges.
- Mix all dry ingredients in big bowl Except chocolate chips.
- Mix in all wet with dry, mix till no clumps and batter is formed.
- Mix in 1 tbs of enjoy life chocolate chips into brownie batter.
- Pour/spoon batter evenly into your pan.
- Top the batter with the other tbs of your chocolate chips.
- Stick in the oven and bake for about 20 min.
- Let cool on a cooling rack for 10 min or so.
- Keep in a sealed container in fridge for up to a week.
- Don't eat too quick.
