I know I've been MIA from my blog for about a solid week (feels a lot longer).
Lots of fun, new, and exciting things are happening with me, and I've been traveling while getting some things together for my move!
Im headed to the Big Apple! I'm beyond excited to be moving up north to New York where I'll be living, going to school, and hopefully working in an internship role (fingers crossed)!
Its always nice to be back in the kitchen and in action, so I thought this picture of half melted dark chocolate would make up for my brief and minor absence.....

One of my favorite things to do is recreate things I had and enjoyed when I was younger.
But putting my own little protein twist on them, making them healthier, and including some good ingredients all in the process!
I even have a notes list dedicated to "Recipe Remakes" , so when I think of something I can get the idea out on paper as quick as possible before I forget about it. (And by paper I mean my phone)

I'd say its even better when it includes peanut butter and chocolate....

Ingredients:
Topping:
Instructions -
- 4 cups Rice Crispy/Puffed cereal (I used brown rice cereal)
- 1/2 cup Peanut Butter or any nut butter depending on falvors
- 1/2 cup honey/maple syrup/sugar free maple/agave any work
- 2 scoops Cellucor Peanut Butter Marshmallow Whey
- 1/2 tsp Vanilla Extract
- 1/2 Butter extract (optional)
- Liquid stevia drops - Vanilla creme flavor
Topping:
- 1 serving of Dark chocolate Bar (30 sec intervals in the microwave till melted)
Instructions -
- Spray 8x8 pan lightly with nonstick or oil and set aside. (I used coconut oil)
- Combine all ingredients except chocolate in big bowl.
- Spray plastic spatula or kitchen tool lightly with the nonstick spray (makes ingredients not stick to spatula)
- Mix together till a lll ingredients are combined and thick.
- Pour bowl ingredients into the 8x8 pan, and flatten/spread with the spatula till you have an even flat surface. (don't press down too hard)
- Melt dark chocolate in microwave on 30sec intervals and drizzle over Rice crispy treats with a spoon.
- store Rice Krispy treats in the fridge till hardened and then cut into as many bars as you want!
- Store these in an air tight container in the fridge for up to a week!
