These muffins, guys.......
In my opinion I think I outdid myself. Usually that happens when I've been away from the kitchen, and have had some time away to collect my thoughts and also to mull things over in my head a bit.
Well, I would say mulling over some ideas/recipes was 100% a good idea as you can see.
Obviously no week is complete in my kitchen without a good recipe, and sometimes a video to go along with it.

Im also a big fan of mixing things up for breakfast.
If life was about having the same meal then god would have made oatmeal and nothing else.....
Eating the same healthy meal every day doesn't really seem all that healthy at all. "Healthy" is not a particular food group, type, or even type of crazy fad diet.
"Healthy" is about finding balance, variety, and including loads of different nutrient dense foods in your day to fuel your workouts, day, busy work schedule, and most importantly your body.
These muffins are protein packed, filled with wholesome ingredients, are nutrient dense, and are a great addition to any morning breakfast, snack, and even a pre or post workout recharge.
Before my workout I fueled up with a Veggie egg white Omelet, two of these incredible muffins, a side of fruit, and an cinnamon roll iced coconut coffee.

A great breakfast muffin has been on my little "list" I have with recipes, ideas, and other things I want to try making.

10 muffins total-
1 muffin= 124 calories: 2F - 15C - 13P
Ingredients:

Ingredients:
Dry-
- 1/2 cup oat flour (I used MyOatmeal Glazed Donut Custom Rolled Oats)
- 1/2 Cup Coconut flour
- 3 scoops Whipped Vanilla Whey Protein (cellucor)
- 1/2 tsp Pumpkin Pie spice
- dash of ground cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
Wet-
- 1 cup Pumpkin Pure
- 5-6 tbs unsweetened vanilla almond milk
- 1 small container fage 0% Greek (6oz) yogurt
- 2 egg whites (6tbs)
- vanilla stevia sweet leaf drops to taste (3-4 full droplets full)
- 1/2 tsp vanilla extract
- 1/2 tsp butter extract
Add in's-
- 1 cup blueberries
- 1/3 cup dried white Mulberries
Instructions:
- set oven to 350
- Take out muffin pan and spray with non stick (I use coconut oil)
- In a bowl combine all dry ingredients and mix with fork
- combine and mix all wet in another bowl
- combine both bowls, and mix till well combined and no clumps
- mix in half your blueberries and half your mulberries into batter
- Spoon batter evenly into 10 of the muffin tins
- Top the muffins with other half of your Blueberries and Mulberries, and dash with extra sprinkles of pumpkin spice
- Bake in oven for 30-35 min
- check with knife to see if done
- Pull out of oven, let cool for 10-15 min or so
- Eat, save the rest in Tupperware container in the fridge for up to a week
