What a month its been. Most of you know I moved up to New York to go to school, and I'm finally settled down in my new apartment! (and kitchen)
First, I give you my sincerest apologies for the absence of deliciousness from your screen, and most importantly; your mouth. But I must say, it feels pretty good to be settled down and back in business.
Many of you are probably aware of a certain time of year thats vastly approaching us....
Some of you probably know because school has just recently started back up for you
(my condolences to you),
and maybe you've even started to feel it get a little cooler out.

Im so excited to be in New York, and to spend my first Fall here! so, in honor of my move, and also to get the pumpkin party started, what better way to celebrate the first official bake in my kitchen then with some Dark Chocolate Chip Pumpkin Protein Oatmeal Cookies.
Fall officially starts on September 22nd, but when's the last time showing up early to a party was a bad thing?....
Especially a pumpkin party.

So good they'll have you like.....
Ingredients: (10-12 cookies)
Instructions -
- 1/4th cup oat flour
- 1/2 cup rolled oats
- 2 scoops Whey Protein (I used Cellucor cinnamon swirl)
- 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4th cup Sugar free Syrup (I used maple)
- 1/4 tsp butter extract
- 1/2 carmel extract (optional)
- liquid stevia drops to taste (vanilla creme or cinnamon flavor)
- 1/2 cup canned pumpkin (not pumpkin pie mix)
- 1 tsp vanilla extract
- 1 1/2 tbs coconut oil
- (cut up) 1 serving of Dark chocolate Bar usually 1/3 bar, or desired amount of chocolate chips
Instructions -
- pre heat oven to 350
- line cookie sheet with parchment paper or non stick spray.
- combined all dry ingredients in big bowl and mix.
- add in all wet and mix till combined into dough.
- once combined, add in cut up dark chocolate and mix till evenly distributed.
- scoop out cookies onto cookie sheet (Makes about 10-12).
- bake cookies for 10-12 min, they will turn golden brown.
